INGREDIENTS

2 tablespoons flour

2 tablespoons butter

11/2 cups milk

2 to 4 teaspoons curry powder2 cups chicken stock

1/2 teaspoon sugar

METHOD

heat milk[ i use micro for this step ]

melt butter then bled in flour and curry powder blend untill smooth [just like making white sauce ]

then add stock, small amounts at a time and heat stirring untill thick,

add sugar if required

then add any meat you like, prawns chicken whatever, add sweated onions,

serve with rice.

This recipe is like the curry in old fashioned curried prawns, just use smaller amount of curry powder to suit your own likes,

good luck and hope you enjoy.

Try "Poe" currys in a box from the supermarket, they are set out as steps and each step is in a packet, they are actually nice too.

Hey there,

quick and easy tomato & chickpea masala.

1 can chickpeas drained and rinsed.

1 can low sodium tomatoes

1 medium onion

2 cloves garlic

1 tsp cumin

1 tsp corriander

1 tsp garam masala

1/2 tsp cracked pepper

1/2 - 1 tsp brown sugar.

1 -2 tsp peanut or vegetable oil.

Brown onion and garlic in frypan until soft.

Add spices and sugar and continue to caramalise onion.

Then add chickpeas and coat with onion and spices - fry for several minutes.

Then add tomatoes and break down the whole tomatoes to the texture you like.

Continue to cook until the mix is as thick as you like.

Serve with white or brown rice.

I LIVED on this when I was doing lots of overtime and it's great as it makes about 2 -3 serves and you can take the leftovers for lunch :)

Enjoy.
