Rhubarb Drink
875g sugar
4.5L water
875g rhubarb, rinsed and chopped
200ml white wine vinegar or cider vinegar
1 or 2 lemons chopped
Place sugar and water in bucket, stir to combine. Stir in other ingredients. Cover with tea towel and leave for 48hrs stirring occasionally.
Strain and pour into sterile bottles for two weeks. Careful when opening the bottles as it becomes a little fizzy.
I made this in time for Christmas this year and was yummy. I find it too strong/sweet to drink on it's own so top up my glass with soda water.
It did get a little bit of sediment in the bottles but was still okay.
I found the best way to enjoy this is with some vanilla vodka, rhubarb, soda water and fresh mint! Very refreshing on a hot day.
My favorite party trick was to get people to taste the straight drink and try to guess what it was made from – only one person ever guessed and I think they cheated.
Next time I make it – I might even add some apples to the mix at the beginning
