Mexican Bean Soup

Okay, not sure how healthy this is but I got really bored being home by myself for the first time yesterday and decided to make a new soup. Was going for a veg and protein combo and found a tin of refried beans in my cupboard. Also had some veg in the fridge left over from pre-op that desperately needed using. So here is what I did.

1 popper V8 vegetable original juice
handful of brocolli, chopped
handful of cauliflower, chopped
1 diced zucchini
1 clove garlic, finely chopped
1 tin refried beans (I use Woolworths Select - it has nice flavour)
1/2 block philidelphia extra light cheese
water as needed
lemon/lime juice (optional)


Put veg juice, chopped veg and enough water to cover into a pot. Cook on medium heat until vegies very soft (my need to top up water). Add tin of beans and cheese and stir until combined. Blend until smooth (I also strained mine as per my surgeon's instructions). For a tangy flavour, add lemon/lime juice to taste :D

Not sure what the nurtritional content is but I could eat less of this than the other soups I have made. Still getting use to making smaller portions so this one is going to last me a while! But its vegitarian friendly and I think it tasted awsome!

I tried the soup and it's awesome! - Nutritionally, the bean mix is a protein replacement and the veg has tobe good for you. If you use light philly it shouldn't be a problem

Thanks for this recipie, made a batch and have had for last two nights, tastes great, added extra stock to thin down.

Silly question but what's 1 popper of V8 juice - is it 1 prima size? I have no idea??
Also anyone who's made it, was it a big batch of soup or more bandit size?

It sounds delicious!

Hi,

The V8 popper is a single serve of juice. Expensive way to buy (pack of 3 single serves at my woolies) but handy to have when you are in a hurry. It made heaps, lucky I don't seem to mind eating same thing for lunch and dinner day after day. Also freezes really well. Just had some for dinner after defrosting 3 weeks later:)

I made something similar to this today (changed it up a but to make with ingredients I had in thehouse) Yummo!

I made it up and added a little bit of chicken. It was very tasty :)
