Potato leek and Bacon Soup

Potato Leek and Bacon soup- this was really awesome!
6 large potatoes
1 leek
1 brown onion
celery (optional)
6 rashers of bacon
garlic
bacon or veggie stock cubes
cream for serving.

Chop potatoes, leek and celery, cover with water and cook in microwave about 15 mins
while you are doing that fry onion, garlic and bacon together.
When the vegies are finished add the onion, garlic and bacon to it and some bacon stock.
Cook for another 10 mins in the microwave.
Blend in food processor.
Add a spoon of sour cream when serving.

made this soup while on my liquids phase. I watered it down when serving obviously, but was still yummy. I didn't use the cream and i used chicken stock instead of bacon or vegetable stock. It was beautiful, would recommend this one. ;)

hey there,
my favorite potato and leek soup, if i used the cream, what is the calories?

im still on mushies for another week or so, so it seems like something that i will love!!
