tomato soup (with or without optifast)

1kg (roma) tomatoes
1.5 litre water
4 stock cubes (use a combination of 2 vegetable & 2 chicken or vegetable & beef)
salt, pepper, garlic, basil (last tow can be fresh or paste) to taste
2 thinly sliced onions

Heat everything except the onions and bring to the boil. It will take between 5 & 10 minutes for the tomatoes to cook. Blend until smooth. After blending add the onions and allow the soup to simmer for another 10 - 15 minutes.

I like my soups with a good taste, so I added another 2 stock cubes and liberally used the pepper. It's better to start easy and add though as you can't take anything out. To add water will make the whole soup tasteless and too thin.

This soup can be used as is (nice cuppa for 4pm!) or in combination with the vegetable optifast soup. If you decide to combine, make it a 50-50 mix of each soup.

Thanks for the tomato soup recipe. Made it for dinner tonight and it was perfect. I needed to eat something hot and tasty - getting a bit over Optifast and salads.

I wouldn't normally eat tomato soup, but I made some of this last night for my lunch today, and threw in some carrots and capsicum to boot, whizzed it this morn in my blender and it tastes beautiful! Even threw a dash of dried chilli flakes in there for a bite of a bite, so thankyou Dom!!
