Super easy and will keep for days... any asian supermarket will have these ingredients and so will many standard supermarkets.
3 cups dashi stock
1 block silken tofu, small dice
3-4 tbsps yellow miso paste
1/4 cups spring onion, finely sliced
DASHI
3 1/2 cups water
20g bonito flakes (katsuobushi)
...or you can get instant dashi granules
To make dashi:
Heat water then just before boiling add bonito
Boil and skim off the foam.
MISO SOUP
Boil dashi then reduce to low.
Add tofu.
Place miso paste in cup or bowl and add a little hot dashi to dissolve.
Add runny miso gradually into pot. Do not boil.
Add onion.
Steep for a couple of minutes.
Strain for liquid dieters then serve!
